We Sampled Every Part of Tuna in Nobu KL’s New Maguro Osusume Menu for May 2025
Nobu is famous for blending traditional Japanese cuisine with modern flair, and we were recently thrilled to try their latest Maguro Osusume menu.
This May, Nobu KL will be featuring a Maguro Osusume menu—a month-long special all about premium tuna where every part of the tuna is honoured, prepared, and presented with Nobu's unique touch.
This seven-course feast includes a mix of three cold dishes and four hot dishes, all of which focus on different parts of the tuna, prioritising sustainability by using every part of the fish from head to tail.
Here’s what you can expect from the Maguro Osusume menu:
COLD
The journey kicks off with the Tuna Tasting—a trio of delicate bites that set the stage for what's to come. This tasting is the perfect intro to the different cuts of tuna, from lean to luxuriously fatty, with each cut featuring different textures and tastes.
The trio consisted of the Akami Tataki featuring lean tuna lightly seared to perfection, the O-Toro Truffle Maui Salsa where the fattiness and creaminess of o-toro is taken to another level with earthy truffle and fresh Maui-inspired salsa, and the Chu Toro Jalapeño, which strikes a perfect balance between rich tuna paired with a spicy jalapeño kick.
Next up was the O-Toro Yuzu Anticucho, where a meltingly tender tuna belly is dressed in a citrussy, Peruvian-inspired yuzu anticucho sauce. This, for us, was one of the highlights of the night, as the fattiness of the tuna belly perfectly fused with the tasty and tangy anticucho sauce.
HOT
The first hot dish of the night was the Toro Caviar Tacos, which although may look simple, pack a big punch. This signature Nobu dish pairs rich, buttery toro and succulent caviar in a crisp corn taco shell.
One of the most interesting dishes on the menu was the Tuna Bone Marrow with Wasabi Soy. Tuna marrow was surprisingly gelatinous, rich, and creamy, while the kick from the wasabi helps to elevate the dish without taking over.
Next up was our absolute favourite dish of the night, and maybe even of any Nobu menu—the Tuna Collar with Sweet Spicy Soy. This dish dives into heartier territory, with the collar grilled to perfection and glazed with a house-made sauce that strikes the perfect balance between heat and sweetness. According to Chef Philip Leong, Executive Chef at Nobu Kuala Lumpur, the dish was created by Chef Nobu after he had sampled some of our local Ikan Masak Kicap Manis.
Although the sauce is quite sweet, the savoury and flavourful tuna collar balances it perfectly, creating a harmonious blend of tastes that leaves you wanting more. It's a dish that truly showcases Nobu's ability to elevate traditional flavours with a modern twist.
Meanwhile, the Tuna Cheek with Wasabi Salsa is all about quiet sophistication. This dish pairs tender cheek meat with a zesty wasabi salsa. Although we’re personally not huge fans of wasabi, it's a perfectly balanced dish that leaves a clean, lingering warmth on the palate.
Finally, the Tuna Steak Teriyaki Sauce was yet another standout dish that perfectly exemplifies how a simple dish can be elevated to new heights with precision and care. This was served with two additional sauces—wasabi and mustard-based— with each dip offering a new way to enjoy the tuna's natural richness.
If you are a fan of tuna, this menu is an excellent way to enjoy the fish from head to tail. Nobu KL’s Maguro Osusume menu will run the whole month of May 2025 at around RM 580++ per head.
First-ever live bluefin tuna auction
Adding to the excitement, Nobu KL is hosting its first-ever Live Bluefin Tuna Auction on Friday, May 9th, at 6 pm.
Guests will get the rare chance to bid on premium cuts of fresh bluefin tuna, with the option to have their purchase prepared on the spot by the Nobu KL culinary team or take it home for their own indulgence.
