We Tasted The Signature Dishes of 7 Different Cuisines at Makan Kitchen, Prepared by Chefs From DoubleTree by Hilton

We were recently invited to a special media preview of Signatures Across the State: A Makan Kitchen Showcase at Makan Kitchen DoubleTree by Hilton KL, where seven DoubleTree by Hilton chefs will participate in an exchange programme with different DoubleTree by Hilton properties all over Malaysia.

From June 1st to 31st July, a number of DoubleTree by Hilton properties across Malaysia will host a chef from another Makan Kitchen outlet, serving dishes ranging from Javanese Heritage to Nyonya Peranakan Cuisine.

The cross-over promotion aims to bring together chefs to create diverse dishes blending their talents and flavours, resulting in innovative culinary creations and a showcase of their dishes at a specific DoubleTree by Hilton property.

Our experience

As we entered the Makan Kitchen at DoubleTree by Hilton Kuala Lumpur, we were immediately hit by various scents, bright colours, and flavours with a huge array of food on display.

Before we dug into the massive variety of food on offer, we were given a quick tour of each food station, where the chef in charge would go through the dishes they had selected to showcase the flavours of the cuisine they represented best.

The cuisines offered include dishes from Nyonya Peranakan, Nyonya, Bornean, Indian-Bornean, Perakian, Johorean, and Javanese heritages.

It includes signature dishes such as ayam penyet, bakso, laksa Sarawak, kerabu petai and rebung, Indian lamb pansuh, tandoori chicken bambangan, otak otak, ayam pongteh, mee rebus, kacang pol, sup kambing, rendang tok, kapitan chicken, yam duck, and many more.

We started with the Johorean dishes, the Batu Pahat lamb shank biryani and kacang pol. As big fans of Johorean cuisine, we loved the dishes showcased by Chef Jais. They were all of high quality and tasted just as good as you’d find at any restaurant specialising in Johorean cuisine.

For our second round, we tried bits and bobs from the Indian-Bornean, Perakian, and Nyonya stations. We were big fans of the Indian-Bornean station, which offered a fusion of dishes from both cultures. Dishes such as the tandoori chicken bambangan and scallop umai perfectly encapsulate the spices of India and the freshness and earthiness of Bornean cuisine.

Meanwhile, the Perakian station had one of our favourites of the night in its rendang tok, which was packed with flavour and spice.

Although we were feeling pretty stuffed at this point, we made sure to try the yam duck and ayam kapitan featured at the Nyonya Peranakan station.

The array of heritage cuisines paired with Makan Kitchen’s usual offerings meant that we left feeling extremely satisfied and in the midst of entering a food coma. Overall we loved the experience to be able to try dishes from various cuisines especially ones we might've never had the chance to do so before.
